GARLIC CARE-
Garlic prefers to be stored in a cool, dry, airy, dark place. A stable temperature is helpful. If you sacrifice any of these things, it will affect the length of storage time. In an open bowl on a shelf in your pantry is good. A garlic "keeper" can be ok if the holes are plenty big. A spot in a dry basement is good, too, but not if it makes you forget to use it!
GARLIC BRAIDS- Braiding is traditionally the best way to store garlic. It keeps the plant intact, which helps to prevent moisture from escaping through the cut neck.
We handcraft 2 different kinds of braids, softneck and hardneck. If your braid has "sticks" tied together, it is a hardneck. If the garlic tops are actually plaited, then it is a softneck. If you want your braid for decoration in the kitchen while you are using it, hang it someplace out of direct sunlight, and not near your stove. If you want it strictly for decoration, hang it anywhere you like and the cloves will eventually dry up to nothing. Do NOT squeeze once it is dried, as it will indent the bulb wrapper.
Use bulbs from a softneck braid starting at the top. On a hardneck braid, top or bottom is ok, but the smaller bulbs store longer, so you might want to start at the bottom!.
If, at any time, you feel your garlic is not storing well, peel and chop the cloves in to olive oil and FREEZE at once. In most home freezers the oil won't get really hard, so when you need garlic for a recipe you can go in with a spoon and take a scoop of ready-to-go garlic!
